Our factory is located in the province of Soria, whose density is one of the lowest in Europe. The land where we sow the raw materials used to be a lake that collected all the waters coming from the river Añamaza. In 1858 the lake dried up and canals were built to channel the water, and a big part of the land was turned into arable land.
Years after, the land was completely dried up but just at a superficial level. Under the land there still was a large aquifer which is the source of the river Añamaza which flows into river Ebro. On this land we grow the raw materials without chemical fertilizers and pesticides.

Due to the location at 1000 meters above the sea level we enjoy the advantages of avoiding problems for example with greenflies or butterflies. These kinds of problems occur neither at this elevation nor in this climate with temperatures varying in summer between 30ºC at daytime and 2ºC at night-time. This contrast allows the potatoes to grow at the ground for at least six months.
In October the potatoes are ripe and in optimal condition for frying so at this point we collect them by hand and store them in wooden boxes.

After collecting the potatoes and before entering the warehouse, the potatoes are completely cleaned and only the best ones are selected for storing in compliance with the standard scales.
In the warehouses where the raw materials are stored the lightning, ventilation, humidity and temperature are controlled.
